Wednesday, July 30th, 2008Dream Dinners Mango Curry Chicken Recipe
Tuesday, July 29th, 2008INGREDIENTS:
(Serves 6)
1 Tbsp Dried Onion Flakes
1 Tbsp Sugar
1 tsp Curry Powde r
1 tsp Ground Coriander
1/4 tsp Ground Cinnamon
1/2 tsp Turmeric
1/2 tsp Kosher Salt
1/2 cup Water
1/2 cup Mango Chutney
1/2 cup Diced Tomatoes with Juice
6 Boneless Skinless Chicken Breast
ASSEMBLY INSTRUCTIONS:
Combine all ingredients, except the chicken, in mixing bowl and set aside.
COOKING INSTRUCTIONS:
1. Heat large skillet with 2 tablespoons olive oil over high heat.
2. Season Chicken with salt and pepper.
3. Brown 3-4 minutes per side.
4. Add sauce mixture and bring to boil.
5. Reduce heat and simmer, uncovered for 10-12 minutes, until internal temp. is 165 degrees F.
Serve over steamed rice.

Dream Dinners July/August Side Dish Recipe

(Serves 4)
Ingredients:
3 cups green cabbage, shredded
¼ cup carrots, shredded
¼ cup red bell peppers, julienne
¼ cup yellow bell peppers, julienne
¼ cup green bell peppers, julienne
¼ cup black beans, canned, drain and rinse
2 tbsp.jalapeño peppers, diced
2 tbsp. red onions, julienne
½ cup mayonnaise
2 tbsp red wine vinegar
1 tbsp. sugar
2 tbsp. McCormick® Montreal Steak® Seasoning
Directions:
1. Combine vegetables and beans together in stainless steel bowl. Toss to mix well.
2. Combine mayonnaise with vinegar, sugar, and seasoning.
3. Pour dressing over vegetables and mix well to coat.
4. Refrigerate for 30 minutes before serving to allow flavors to marry.
(Serves 24)

Dream Dinners Hawaiian Chicken Recipe
Friday, July 25th, 2008(Serves 3)
1/8 teaspoon black pepper
1 tablespoon granulated sugar
½ tablespoon dried onion flakes
1 teaspoon cornstarch
2 tablespoons diced green onions
¼ cup black beans
1 tablespoon diced red peppers
1 tablespoon lime juice
2 tablespoons rice vinegar
½ teaspoon hot sauce
¼ cup crushed pineapple
1 teaspoon ginger puree
½ tablespoon chopped garlic
1 teaspoon chicken soup base
1 tablespoon orange marmalade
3 boneless, skinless chicken breasts
Add all ingredients, including chicken, to a gallon size freezer bag. Freeze until ready to use. Follow directions below, or if not freezing ahead of time, skip to cooking directions.
COOKING INSTRUCTIONS:
THAW
1. Heat med. Frying pan w/2 tsp. olive oil over high heat. Season chicken & brown 3-4 min, per side.
2. Add sauce & ¼ cup water, bring to a boil. Reduce heat & simmer, covered, 10-15 min. (internal temp. 165 degrees F).
Serving suggestions: Jasmine rice & steamed pea pods
