Orzo Pilaf Recipe

Orzo Pilaf
(Serves 4-6)

Ingredients:

1/4 cup margarine
1/2 cup orzo pasta
1 chopped onion
1 cup rice
2 1/4 cups chicken broth

Directions:
1. Brown orzo and onion in margarine over med-hi heat.
2. Add rice, broth and a dash of pepper and salt.
3. Bring back to a full boil, then cover, lower heat, and simmer for 20 minutes.

Dream Dinners Crispy French Onion Chicken

This new recipe was one of this year’s Dream Dinners Recipe Contest winners, and I can understand why.  When you hear ‘French Onion’ you might think ‘French Onion Soup.’ This doesn’t taste anything like French Onion Soup.  The onion breading was flavorful and crispy, and the sauce you coated the chicken with before breading added another extra kick.

Review:

According to one experienced Dream Dinners taster,  “This beats out even the Herb Crusted Flank Steak. The chicken was very tender. The onion flakes were off the hook. The seasoning used on the chicken could be used to mix in with your rice for extra flavor.”  And I must say, I have to agree. I don’t know if it’s my top, top meal (that might be reserved for the Coconut Chicken) but I’m am VERY glad that I took the leap of faith and bought two of these.

Tips:

I ran a little low on the breading – I’m not sure if I didn’t smoosh the onion pieces enough or if there simply weren’t enough. Just in case, I’d recommend adding an extra 1/4-1/2 cup of breading when you assemble it. I wish I had thought of this idea sooner, but if you’re serving it with rice, keep the extra sauce in the saucepan and mix the rice in with it to soak up all the goodness.
