Have you ever gone through food phases where you absolutely love a certain type of food so you make it and make it and make it until you’ve had enough and just can’t eat it anymore? Well, that happened to me a few months ago with Cheeseburger Quesadillas (you may remember it from my Mission Tortilla review.) One unfortunate side effect of having these minor food obsessions is that when you’re “over” it, you’re usually stuck with a pile of left over ingredients that you had stock piled since you were eating it so much.

Fast forward to this weekend, where I looked at my left over tortillas that had been sitting on the counter for quite some time. “There must be something I can make with these tortillas,” I thought. “Sure, they’ve been opened and are a little dry and kind of stale, but they aren’t moldy or anything….isn’t there something I can do with these?” The answer is yes and the answer is make tortilla chips!

Excited with my totally brilliant brainwave I Googled for some recipes and finally decided on the easy option to bake (not fry…I am “trying” to be healthy after all) my tortillas and turn them into nice crispy chips. Yay!

Here’s what I did to make my freshly baked tortilla chips:

  1. Preheat oven to 400F.
  2. Spray tortillas (front and back) with olive oil/vegetable oil spray
  3. Sprinkle seasoning on both sides – I used salt and garlic salt
  4. Stack tortillas and cut them into wedges – you can make 8 wedges per tortilla (cut in half four times)
  5. Place tortilla wedges onto a cookie sheet and bake for 8-10 minutes.

And here’s a shot of my freshly baked chips! Don’t they look delicious? I learned that I needed to be a little heavier hand on the seasoning, but other than that they came out nice and crispy. I loved that the weren’t totally oily and I didn’t feel like I was being too unhealthy be eating them.
