  • I frequently find ways to make tasty and refreshing treats. Sometimes I just get a little tired of heavier or rich desserts and I want something lighter that doesn’t weigh be down. I’ve never made popsicles before, but was eager to try. I remember kids making popsicles back in the day and used little dixie cups with popsicles sticks or chopsticks propped inside as the pop froze. Those were always made with some sort of juice. Now, I’m looking for something a little more…upscale.

    On request, I made some cherry frozen pie pops using Lucky Leaf Premium Cherry Pie Filling. My next batch will definitely be strawberry. These things are delicious, refreshing, and SO EASY to make.

    Check your local grocery stores to see if they carry Lucky Leaf Premium Pie Filling – one of the best pie fillings I’ve ever used, whether it’s baking or making frozen pie pops!

    Fruit Frozen Pie Pops Recipe

    A tasty and refreshing treat perfect to help you beat the heat.
    Ingredients
    • ½ 21-oz. can Lucky Leaf Premium Pie Filling (any flavor)
    • 1 cup milk
    • ½ lemon, squeezed

    Instructions
    1. Mix all ingredients in a blender until smooth and pour blended mixture into ice pop molds.
    2. Freeze at least 4 hours (best overnight).
    3. Serve as ice pops.
    4. Pour any remaining mixture into a freezable container and serve as frozen pie treat.

    Notes
    Remaining pie filling is great on pancakes or mixed into yogurt.

      I love cherry and lemon, it would be hard to choose.
      My mother used to make us popsicles using canned, evaporated milk, lemon juice and sugar. Just mix to taste, I guess, I have no idea what the proportions were, but then pour into molds and freeze – tangy and creamy at the same time. We loved them. Just saying….also, tupperware has molds and one recipe we gave out at parties was just to make instant pudding (chocolate makes GREAT fudgesicles) and freeze that)
      I also think that if you make the Lucky Leaf recipe and poured it into a metal pan, you could freeze it, then scrape it with a fork to serve, and it would be a cherry granita – similar to sherbet, but not too much. Must be scraped with a fork to get that good granita texture. That is all.
