Mrs. Cubbison's Stuffing MixFor the past few years, Mrs. Cubbison’s has been my go-to choice for croutons. I eat a surprising amount of Caesar Salads, and their Caesar Salad Croutons are the perfect choice for my salads. What I wasn’t as familiar with was Mrs. Cubbison’s Seasoned Stuffing/Dressing Mix.

Mrs. Cubbison’s Seasoned Stuffing/Dressing mixes are a great way to make stuffing for special dinners. As I am still something of an “amateur” when it comes to cooking big family dinners, I thought it only logical to try out a new recipe before the actual dinner. I found this unique stuffing recipe that is perfect for Easter – Stuffing Easter Eggs!

This is a fairly simple recipe, which makes it perfect for me, and can be used to help up your Easter meals.

Stuffing Easter Eggs Recipe

Stuffing Easter Eggs
Ingredients:

1 box Mrs. Cubbison’s Stuffing Mix
3/4 cup chopped celery
3/4 cup chopped onion
1 cup broth, juice or water,
1/2 cup canola or vegetable oil
2 large eggs, lightly beaten

Directions:
1. Preheat oven to 375°.
2. Lightly coat a cookie sheet with cooking spray.
3. Mix stuffing mix, celery, onion, broth, oil and eggs in a bowl.
3. Shape moistened stuffing into egg shapes and arrange on cookie sheet
4. Bake stuffing “eggs” for 15-20 minutes or until golden brown.
5. Serve with shredded cabbage “grass” beneath them or in a colorful linenen-lined Easter basket.

Mrs. Cubbison's Stuffing Easter EggEasy is just what I need and describes this recipe perfectly. I used Mrs. Cubbison’s Corn Bread Stuffing Mix, chicken broth, and vegetable oil. Using the corn bread mix made the stuffing eggs a little sweeter than the other stuffing options.

Make sure you use a very large bowl to mix all of the ingredients together. You could use a spoon to mix but I found it more effective to just use hands. Making the eggs would be a fun activity to do with the kids as well, with everyone making their own eggs. After rolling a few eggs, I put them in the oven.

The result? Insanely delicious stuffing (eggs) if I do say so myself. The eggs have a crispy exterior with a nice crunch. Inside the egg, the stuffing is just right. I had no idea the making stuffing could be this easy and I love that I can tie the stuffing into the Easter theme in such a creative manner.
