  • Italian Tossed Green Salad
    (Serves 25)

    Ingredients:
    12 cups mixed greens, washed and dried
    2 cups arugula, washed and dried
    5 medium tomatoes, cut in wedges
    2 medium carrots, chopped
    3 celery stocks, chopped
    ½ red onion, sliced thinly
    1 cup marinated artichoke hearts, drained and slightly chopped
    1 can garbanzo beans, drained
    1 cup shredded parmesan cheese
    2 cups garlic croutons
    2 cups of your favorite Italian Dressing

    Directions:
    1. Place greens and arugula in large serving bowl.
    2. Top with the vegetables and beans, toss lightly.
    3. Top with cheese and croutons.
    4. Toss with dressing just before serving or serve on the side.

      Oh this sounds so good. I have a jar of artichokes on the shelf and was wondering what to do with them. This is the perfect recipe to use them on.
