Ratatouille Fondue
Ingredients:
1 cup sliced mushrooms
1 cup diced onions
1/2 cup roasted red bell peppers, minced
1/2 cup sliced black olives
1 cup chopped whole artichokes
2 cups sausage, cooked and crumbled
1 cup canned diced tomatoes
2 teaspoons chopped garlic
1 teaspoon salt
1 teaspoon pepper
1/4 cup olive oil
2 teaspoons Italian seasoning
1 cup Parmesan cheese
1 cup lowfat cream cheese
1 cup nonfat sour cream
1 cup beef broth
Cooking Instructions:
1. Simmer in crock-pot for 6-8 hours on low.
