Pasta Primavera Salad (Serves 6-8)
Ingredients:
1/2 lb. rotini, penne, or other pasta1 ea.,
6-1/2 oz. jar artichoke hearts in brine, drained and rinsed- about 1/2 C.
1/4 red bell pepper, stem & core removed, cut into long, thin strips
1/2 medium zucchini, quartered and sliced very thinly
1/4 C. green onion, sliced
1 C. broccoli florets, frozen, thawed
1/2 C. grated Parmesan cheese
3 Tbsp. prepared pesto
3/4 C. reduced fat ranch dressing- your favorite commercial brand

Cooking Instructions:
1. Cook pasta according to package directions.Chill under cold water, and drain thoroughly.
2. Place pasta, vegetables, and Parmesan cheese in large mixing bowl.
3. In small bowl, mix pesto and dressing.
4. Pour combined dressing over all ingredients and stir to mix thoroughly.
Summer Squash Gratin (Serves 6-8)
Ingredients:
2 medium onions, sliced 1/4″ thin – about 4 C. of sliced onion
1 Tbsp. olive oil
5 ea., plum tomatoes, stem ends removed and sliced very thinly
2 ea., 6″ – 8″ zucchini, sliced 1/4″ thin
2 ea., 6″ – 8″ yellow summer squash, sliced 1/4″ thin
1 Tbsp. olive oil
1/2 tsp. ground black pepper
1 tsp. Salt
2 Tbsp. fresh thyme, stems removed, chopped
1/2 C. grated Parmesan cheese
Cooking Instructions:
1. Saute onions in large frying pan with 1 Tbsp. olive oil over medium heatuntil limp and beginning to brown, about 12-15 minutes.
2. While onions are cooking, slice tomatoes and place in single layerin bottom of sprayed, shallow 9″ X 13″ baking pan.
3. Slice zucchini and place in single layer over tomatoes.
4. Slice yellow summer squash and place in single layer over zucchini.
5. When onions are limp and beginning to color, place evenly over yellow summer squash.
6. Drizzle with remaining olive oil, add pepper and salt, and top with cheese.
7. Cover dish and bake at 350° F. for 1 hour or until cheese is melted and vegetables are tender.

Easy Baked Beans (Serves 6-8)
Ingredients:
3 ea., 15 oz. cans white beans, drained and rinsed – about 4 C.
6 slices bacon, cut into chunks and fried until cooked
2 Tbsp. dried onion
1 C. BBQ Sauce- your favorite commercial brand
1/3 C. molasses
1 Tbsp. prepared yellow mustard
1/2 tsp. ground black pepper

Directions:
1. Combine all ingredients in mixing bowl, and mix thoroughly.

2. Place in sprayed casserole dish and bake, covered, at 350° F. for 1 hour or until bubbling around edges
