Chicken Marsala with Mushrooms and Mashed Potatoes
I grilled the chicken and heated the sauce and mashed potatoes separately. I sliced the chicken breasts and served over the mash potatoes, then drizzled Marsala sauce over the whole dinner. We love mushrooms and garlic, so when I made this I added a little more of both.
Diablo Chicken with Spanish Rice
The lime in this recipe really make this deliciously different. I made 2 of these and took them on our boat to bbq for friends. I boiled the marinate, and put over the grilled chicken, served with the rice on the side, it was delicious. An easy dinner with fresh slices of watermelon and lots of napkins!
Apricot Glazed Pork Chops with Corn Cakes
I grilled fresh apricots to serve with this Dream Dinner. Just cut the apricot in 1/2 and brush cut side with olive oil, sprinkle with salt and pepper, grill cut side down for 2- 5 min or just until they have grill marks, turn and grill 1 more min. Serve cut side up with fresh thyme if you have some. We did have 2 pork chops leftover that I sliced up the next day and tossed into a delicious salad with lettuce, feta cheese, lettuce, red onion and sliced almonds.
Summertime Pasta with Chicken
I mixed some fresh basil into this after I baked it and tossed a hand full of cherry tomatoes from my garden in too! I love summer. I made the 6 serving for the 3 of us so I could turn the leftovers into a delicious pasta salad. I tossed the chilled leftovers with nonfat Italian dressing and served it over a bed of lettuce.
