Stuffing-Coated Baked Chicken

Tasty, moist, delicious. Quite probably the best baked chicken ever.
  • 4 boneless chicken breast halves or thights
  • ½ cup sour cream
  • 1 tablespoon fresh lemon (or lime for a fun twist) juice
  • 1 teaspoon soy sauce (low sodium for less salt)
  • 1 teaspoon garlic powder
  • 1 dash pepper
  • 1 6-ounce package of stuffing mix, crushed into crumbs
  • ¼ cup butter, melted (optional)
  1. Preheat oven to 375F.
  2. Lightly grease baking dish with cooking spray or butter.
  3. In a medium bowl, mix the sour cream, lemon juice, soy sauce, garlic powder, and pepper.
  4. Place chicken in bowl and mix until coated. Let marinate for 5-10 minutes.
  5. Put the crushed stuffing mix into a shallow dish or plate.
  6. Coat both sides of the chicken with the stuffing mix. Feel free to smoosh the chicken a little to get a nice coating.
  7. Arrange the chicken in the baking dish and drizzle with melted butter (or spray the tops with cooking spray.)
  8. Bake 40-59 minutes, until the chicken is no longer pink and the juices run clear.
