Chicken has been one of those foods I often have trouble with. Most of my meals only require one or two breasts of chicken, but I’ll inevitable buy one of those big jumbo packs, which leaves me with a freezer full of frozen chicken. I guess for most people that wouldn’t be to bad, but with my cooking habits….well, let’s just say I have bags of chicken that are well over a year old in my freezer. It’s questionable whether a third party source would be able to identify it as chicken. A new alternative to buying gobs of chicken is to try canned chicken such as Swanson’s Premium Chunk Chicken.
About Swanson Premium Chunk Chicken
The Review
I’ll be perfectly honest. I’ve never cooked with canned chicken before, and as far as I know, I’ve never eaten canned chicken either. Even my fellow testers raised their eyebrows a little when I told them we were testing Swanson’s Premium Chunk Chicken. I’m not sure why it has the stigma that it does – possibly because people think that if it is canned, it won’t taste fresh. But being ever adventurous, I took the plunge and picked up three cans of Swanson’s Premium Chunk White Chicken Breast. (It was a nice little bonus that their cans now offer 28% more chicken for the same price.)
I opened up the chicken and drained out the water. Looking at the chicken itself, it looks pretty much like chicken. It didn’t have any preservatives, artificial flavors, or MSG. Plus, it’s 98% fat free. The only thing I noticed was that it was a little bit more fibrous, as in you could pull the pieces of chicken apart similar to pulled pork. The color was a little pinker than I expected for cooked chicken – but that might just be my perception. (I’m usually just a fried drumstick kind of gal.)
The real adventure for me came when I started testing out a couple of Swanson’s recipes for the Premium Chunk Chicken. First up is the Creamy Chicken Quesadilla. I did modify the recipe a little bit, namely I halved the recipe and skipped the jalapenos. The recipe was VERY easy to prepare and I had a lot of fun stuffing, folding, and pinching the tortillas. That seems like something fun that the kids could help with to. Pop them into the oven and then a few minutes later, you have piping hot chicken quesadillas. A word of caution – be carefully when you bit into the quesadilla – the contents are HOT. The chicken, cheese, and cream of chicken soup blended together amazingly for a tasty dish. I originally only put on quesadilla on my plate, but I had to go back for the second because I loved it so much.
A week or so later, I was in the mood for some more homestyle cooking and decided to prepare the Homestyle Chicken & Biscuits. This is a great one dish recipe to prepare. Essentially mix everything together, and bake. About half way through, top with the biscuits. 15 minutes later, you have a dish that has the bread, meat, and vegetables all in once scoop. Be aware that if you forget to thaw the vegetables, that you will need to add extra baking time to the dish. I ended up turning the temperature down and moving the dish to the lower rack so the biscuits wouldn’t burn. It’s much simpler to remember to thaw the vegetables. I thought that the Homestyle Chicken & Biscuits felt very homey and was a great dish to warm you up during this cold weather. It’s like it’s half vegetable soup, half chicken sandwich, all blended together on a plate.
I’ve got to hand it to Swanson. Swanson Premium Chunk Chicken allows you to quickly and easily prepare tons of great dishes (or at the very least, these two.) No boning, tearing of skin, or handling icky raw chicken. If I had tasted these dishes blind, I don’t think I would have known that the chicken came from a can. And after tasting these meals – I wouldn’t even care if it did.
