As summer winds down, and as snow starts appearing on the hills across the valley, we find out activities centering around the home and spending time with each other. One of the new “skills” I’ve picked up has been preparing home cooked meals, and I’ve enjoyed hearing those familiar *burps* of happy bellies. It’s been so much fun watching my own cooking skills grow as I test out new recipes and ingredients.
One of my go to meals during the weeknights when I’m short on time is pasta. Not only is pasta super easy to make (just boil water, really) but you can pair it with veggies, chicken, beef, or just keep it simple with an awesome sauce. Not only is pasta a very budget-friendly option that can work into virtually any meal and please even the pickiest palates, it also has complex carbs that are great fuel to help power your day.
Tonight, I needed something that was easy to make and required minimal supervision. The Pasta Fits website offers a variety of pasta recipes, from red meat dishes to desserts that use pasta. Within a few minutes, I’d decided on The $5 Dinner Mom’s Roasted Garlic and Parmesan Noodles. This is the perfect side dish to accompany some leftover lamb from earlier this week.
Roasted Garlic and Parmesan Pasta Recipe
Roasted Garlic and Parmesan Pasta
Ingredients
- 1 lb. spaghetti or other favorite noodles
- 4 heads of garlic
- Drizzle olive oil
- 2 Tbsp parmesan cheese
- Pinchful of oregano leaves
- Salt and pepper
Instructions

Cook the pasta noodles as directed on the package.

Preheat oven to 400.

Cut off the tops of the garlic heads and place them in a small baking dish. Drizzle with olive oil, and place a small piece of foil over the top, so the tops don’t burn.

Roast for 20-25 minutes, and enjoy the aroma.

Remove from oven and let cool until you can handle them, about 5 minutes.

Squeeze the roasted garlic into a small bowl or chopper/food processor. Add another drizzle of olive oil, the parmesan cheese, oregano leaves, salt and pepper. Mash well, or chop until “paste” forms.

Once the noodles are cooked and drained, add the paste and toss together.

Serve Roasted Garlic & Parmesan Noodles, as a side dish with baked chicken, beef roast, or other favorite Italian dish.
One of the things I loved about this pasta side is that it is super easy to make. Cook pasta. Roast garlic. Mix. Well, that’s basically it. First, I roasted some garlic drizzled in olive oil in the oven at 400F for about 25 minutes.
As the garlic cooked, I cooked up 1 lb of Ziti Rigati. I’m hoping that the garlic and parmesan mix will coat these tublar pastas.
After the garlic roasted, I smushed the garlic and mixed it with 2 Tbsp of Parmesan cheese, a pinch of dried oregano leaves, salt, and pepper. Then I added the garlic and Parmesan mixture to the cooked pasta. I topped it with a sprinkle of shredded Parmesan cheese before serving with our lamb.
With just 7 ingredients, this pasta side dish is something that can be made using items most of us have in the pantry without needing a separate trip to the grocery store.
