I’ve come to the point in my life where I can just admit I’m a snacker. Whether I’m watching TV or working out some difficult code, I enjoy having something to snack on. Now, it’s not about NOT snacking, it’s about making the right choice when I do snack. For example, snacking on carrots is a much better choice than snacking on fried potato wedges. I was just introduced to a new option for health snacks – Old London Snacks, Melba Toast, and Bagel Chips.
There are lots of ways to enjoy your Old London snacks and toast. First, you can enjoy them as-is. Simple, flavorful, crunchy, yummy. We sample a couple of different varieties of Old London Foods – Sea Salt Melba Snacks and Garlic & Herb Bagel Chips. The Sea Salt Melba Snacks are made with whole grain and have 5g of whole grain per serving. They’re a very mild snack that is great for dips, salsas, or spreads. The Garlic & Herb Bagel Chips really back a flavor punch. You could really taste the garlic and herb flavor that is baked through the chips.
You can also cook or bake up a variety of tasty foods with Old London foods. Visit the Recipes tab on the Old London Facebook page and you’ll find such tasty treats as Mediterranean Cafe Mocha Bars and Melba Toast Quiche. We took a variation of their Chocolate Pistachio Crunch and made Chocolate Cashew Toast.
To make Chocolate Cashew Toast, melt semi-sweet dark chocolate chips using a double boiler, microwave, or bowl over boiling water in a pot method. We used the bowl over a pot of boiling water method.
Then, dip the Old London Melba Snacks into the melted chocolate, covering half of the snack, letting excess chocolate drip off.
Coat both sides of the chocolate-covered snack with chopped cashew nuts (or another nut of your choice.) You can also leave some of them nut-free. Place the cashew-nut covered, chocolate-coated snacks in the fridge to help the chocolate to harden.
Enjoy this delicious treat. It has a perfect blend of crunchiness with sweetness and just a hint of saltiness that almost makes everything savor. YUM!

Chocolate Cashew Toast Recipe
Ingredients
- 1 box 5.25oz Old London Melba Snacks - Sea Salt
- 2 bags semi-sweet dark chocolate chips
- 1 cup of cashew nuts chopped and toasted
Instructions

Stir chocolate in large bowl set over saucepan of boiling water until melted and smooth making sure that water does not touch bowl and that the chocolate does not get too hot.

Remove from over water.

Dip into melted chocolate to cover half the Melba Snack.

Gently shake off excess chocolate.

Place on baking sheet and quickly sprinkle with chopped cashews.

Refrigerate until chocolate is firm, about 35 minutes.
