Quick and Easy Popovers
2 large eggs
1 cup milk
1 cup all-purpose flour
¼ tsp salt
12 Tbsp. (1 ½ sticks) unsalted butter
1. Preheat oven to 400° F
2. In a medium bowl, beat eggs & milk until combined. Add flour & salt and beat well until smooth.
3. Melt butter. Fill each cup of a 3″ muffin tin with 1 Tbsp. butter (twelve muffins cups total) and then fill each cup 2/3 full with batter.
4. Place in oven, reduce heat to 350° F, and bake for 15-20 minutes until puffed and golden brown. Serve immediately.
