3 14.5 oz. cans black beans; rinsed and drained
1 large red onion; chopped
1 large red bell pepper; chopped
1 1/2 cups green onions; sliced
1 bunch fresh cilantro; chopped
6 tsp fresh garlic; minced
1/2 tsp red pepper flakes (adjust amount for spiciness)
1 tsp kosher salt
1/2 cup olive oil
1/2 cup seasoned rice vinegar
3 tbsp lime juice
1. Mix corn, beans, chopped vegetables, and cilantro
2. Wisk remaining ingredients to blend and pour over corn mixture. Toss to coat.
3. Chill in serving bowl in refrigerator. Serve.
