For the past couple of weeks, we’ve been using the new Cascade Platinum Pacs in our dishwasher. Not only are the whites whiter and the glasses clearer, but the silverware is regaining its brilliance so they’re looking like new again.
As the weather is warming up, I decided to showcase my new, like-new dishes and silverware by “cooking” up a twist on Gail Simmons’ recipe for a Bumbleberry Pie Sundae. If you didn’t know, I’m kind of a fan of anything strawberry lemonade, so instead of the traditional mixed berries that make up a Bumbleberry pie, I used fresh strawberries. I also swapped out the raspberry sorbet for limoncello gelato. Gail’s recipe for Bumbleberry Pie Sundae is below, and our recipe for Strawberry Lemonade Pie Sundae will follow this post shortly.

When it comes to preparing desserts with layers or lots of colors, I find that using clear glasses really allows you to showcase everything that went into the dish. You get to see each layer of flavor which, to me, makes it even more delicious. When you’re serving food in glasses, one thing you absolutely don’t want is spots. Not only does it mar the appearance of the dessert, but it might also make people think “is this really clean?” With Cascade Platinum, I’m confident that my glasses will be spot-free, making them the perfect serving dish for Strawberry Lemonade Pie Sundae.

Bumbleberry Pie Sundae Recipe

Bumbleberry Pie Sundae
Ingredients
- 3 cups plus 3/4 cup mixed berries well washed and divided (any combination of strawberries hulled and quartered, blueberries, raspberries, blackberries halved)
- 4 tablespoons granulated sugar divided
- 2 teaspoons fresh lemon juice
- 1 pinch coarse salt
- 1 cup heavy cream
- 1 pint vanilla ice cream
- 1 pint raspberry sorbet
- 6 graham crackers crushed
- 2 tablespoons fresh lemon zest
Instructions

In a medium saucepan heat one cup of mixed berries, 2 tablespoons sugar and lemon juice over medium heat, until the blueberries begin to burst and the other berries break down, about 10 minutes. Remove from off heat and stir in the pinch of salt.

Place half the berry mixture in a blender and puree until smooth. Return the sauce to the saucepan and stir well to combine with remaining fruit. Allow to cool slightly.

Meanwhile, in a medium bowl crush 3/4 cup of mixed berries with remaining 2 tablespoons sugar using a fork, until slightly chunky and loose. In a large bowl or stand mixer, using a balloon whisk or hand-held mixer, beat the cream at medium speed until soft peaks form. Gently fold the crushed berries into the whipped cream. Refrigerate until ready to serve.

To serve: spoon 2 tablespoons of the sauce into each of 6 parfait or rocks glasses. Top with a scoop of vanilla ice cream, a sprinkling of crushed graham crackers, and a pinch of lemon zest. Then add a scoop of the raspberry sorbet and another 2 tablespoons of the sauce. Top with a dollop of whipped cream and finish with a sprinkling of the graham crackers and another pinch of zest. Serve immediately.

I bet this tastes as good as it looks! I love the idea of serving sundaes in wine glasses, will have to try it.
Oh wow, this recipe is decadent! All that berry goodness! Your replacements don’t seem to take away from the deliciousness that is obvious regarding this dessert. I would love to try this original one, but strawberry lemonade sounds just as good! I love the whipped cream mixed with some berries. Your parfait glass looks crystal clean!
