Ever since we got a giant box of stuffing from Costco, I’ve been on a stuffing kick. According to the Thanksgiving Across America Survey, stuffing is the 2nd favorite food for Thanksgiving. While I agree that Thanksgiving stuffing is tasty, who says stuffing should only be enjoyed during Thanksgiving? It makes such an awesome side dish AND can be used to make some other tasty dishes as well.
In the spirit of using stuffing as more than “just stuffing”, I used Mrs. Cubbison’s Stuffing Mix to make one of the best baked chickens ever. Seriously. The. Best.
Best. Baked Chicken. Ever.
Stuffing-Coated Baked Chicken
Ingredients
- 4 boneless chicken breast halves or thights
- 1/2 cup sour cream
- 1 tablespoon fresh lemon or lime for a fun twist juice
- 1 teaspoon soy sauce low sodium for less salt
- 1 teaspoon garlic powder
- 1 dash pepper
- 1 6- ounce package of stuffing mix crushed into crumbs
- 1/4 cup butter melted (optional)
Instructions

Preheat oven to 375F.

Lightly grease baking dish with cooking spray or butter.

In a medium bowl, mix the sour cream, lemon juice, soy sauce, garlic powder, and pepper.

Place chicken in bowl and mix until coated. Let marinate for 5-10 minutes.

Put the crushed stuffing mix into a shallow dish or plate.

Coat both sides of the chicken with the stuffing mix. Feel free to smoosh the chicken a little to get a nice coating.

Arrange the chicken in the baking dish and drizzle with melted butter (or spray the tops with cooking spray.)

Bake 40-59 minutes, until the chicken is no longer pink and the juices run clear.
To get started, mix the the sour cream, soy sauce, lemon juice, and seasonings into a medium bowl. It will smell good. Then place the chicken into the bowl and mix it around with a spoon (or your hands) until the chicken is coated and let it marinate.
Marinate the chicken. It makes it better.
While the chicken is marinating, crush the stuffing mix into crumbs. You can place them in a bag and use a rolling pin or the bottom of a mug to help crush the mix. I used Mrs. Cubbision’s cornbread stuffing mix. One of the things that is so great about Mrs. Cubbison’s stuffings is that they are completely packed with flavor right out of the box. This makes them an ideal, flavorful choice for breading. Plus, since you’re crushing up the stuffing mix, it makes the breading nice and thick so that it comes out crispy with a great crunch.

After marinating, you’re going to coat both sides of your chicken with the crushed stuffing mix. I left some pieces of the stuffing mix on the larger size so I could get a nice crunchy coating so I did put a little bit of pressure on the chicken as I was coating to help everything “stick.”

Stuffing Breaded Chicken
Place the breaded chicken into a greased baking dish and then top with the melted butter or spray with cooking spray. This will help get the chicken crispy and golden brown. Put it in the oven and let it bake for 40 to 50 minutes, until the top of the chicken is golden brown and the chicken is fully cooked.
I’ve tried cooking baked chicken before, but it’s never come out as tasty as this. It tastes a million times better than my turkey – which is either good for the chicken or reflects my turkey-cooking skills – one of the two. The chicken came out moist, tender, and had great flavor that is quite simply “awesome.”

Goodness. I do so much of my cooking by “feel”! 😀 There is a recipe I got from a dear friend a few years ago that my dad loves; it’s for cranberry jello salad. It’s yummy! We have it instead of cranberry sauce now. 🙂
