A couple of weeks ago, I started using Country Crock spread in some of my baking. I’ve been on something of a strawberry lemonade kick and I had a hankering for cheesecake. I put 2 and 2 together and, decided to cook up strawberry lemonade cheesecake.
And if you know cheesecake, you know that the crust of the cheesecake is important. You want a crust that has some flavor and doesn’t crumble or fall apart. The crust – the foundation of a good cheesecake – is where I would put Country Crock spread to the test.
I’ve never used Country Crock to bake before, although I’d heard that you could use it just as you would butter. Yes, a cheesecake crust would be a great way to test out Country Crock. Graham cracker crumbs, sugar, and Country Crock spread – mix it together and then pressed into the bottom of six muffin tins (lined with cupcake liners… learned this one the hard way.)
As the cheesecake crusts baked, I wondered how they’d come out. I didn’t have to wait long. A few minutes later, I pulled out a tray of perfectly golden cheesecake crusts. They weren’t crispy and overcooked and they weren’t crumbly and falling apart. I breathed a sigh of relief knowing that my cheesecakes would have a solid foundation to stand (or sit?) on.
I used to avoid butter. I was aware of the high fat and calories that come with butter and, trying to be healthy, kept my butter intake to a minimum. Country Crock offers another alternative to butter, an alternative that has 70% less saturated fat and 30% fewer calories than butter. Use it in your next baking project or keep it simple with some buttered toast.
