Review:
When I think of the islands, I typically think of tons of flavor. This dish didn’t have the POW flavor, or even a very strong citrus flavor for me – maybe I didn’t add enough lemon zest. The chicken came out tender, but if I didn’t eat the chicken with the coconut rice (meaning the same bite) it tasted a little bland for me. On the bright side, the coconut rice was delicious – not to sweet or too coconutty for me. This is a different recipe from the coconut rice we’ve seen before (with the Bombay Chicken.)
Tips:
Keep in mind that the rice takes 20-25 minutes to cook, while the chicken takes less than 15. I recommend starting your rice well before cooking the chicken, or else you’ll end up having wait around for the rice. Also I found that some of the coconut rice burnt on the bottom (just a little bit) so make sure you don’t overcook it.
