I received a selection of the new pastas in Conchiglie, a tricolor pasta in the shape of sea shells, Gigli, a ruffle-edge cone shape, and Fusilli, a tricolor corkscrew pasta. The pastas are made with 100% Durum Wheat Semolina, bronze cut, home-style, and perfect with sauce.
I made Tuscan-inspired recipes using two different pastas, the Conchiglie and Gigli pastas. The pastas were easily cooked al dente, tasted great, and the tricolors maintained their shades of orange (color from tomato), green (color from basil), and natural. The taste was amazing and made my dishes look gourmet from my own kitchen.
I also received a Glaze with Balsamic Vinegar of Modena, perfectly reduced, and containing 6% acidity. Sourced from Modena, one of only two places where true Balsamic vinegar is produced to PDO classification—Protected Designation of Origin by the European Union—which means it’s authentic to the growing region and only products from there can have that designation. The Balsamic vinegar is made from locally grown grapes and aged in traditional wood casks.
The taste of the Balsamic glaze is incredible and will enhance sweet and savory dishes. I used it on a simple Caprese-inspired tomato and mozzarella salad with a spinach Chiffonade–I didn’t have fresh basil handy. I also added a little hard salami because my guys like to have some with cheese, but it’s not traditional. This made a beautiful presentation and had the traditional three colors of the Italian flag: green, white, and red.
