Review:
I’ll admit that my memory of this meal was very different than how it actually tasted. The breading mixture with the pecans was delicious – to the point that I’d mix it in with my rice and just eat those two things together. Good flavor and lots of crunch to the breading. This is another case where the herbs and the marinade that coat the chicken are VERY strong – so if you prefer a milder taste, definitely go easy on the herbs. Baking instructions were easy and the chicken came out moist and tender. Ultimately, I would get this meal again, I’d probably just tweak the ingredients during the assembly process.
Tips:
If your pecans aren’t pecan pieces, then use a cylindrical cup or a rolling pin to break up the pecans before adding it to the breading mixture. I’d recommend going light on some of the herbs (I think it’s thyme.)
