Southwest Chicken with Red Beans and Rice
This dinner really is set off by the delicious spice, I made ours extra spicy adding a 1/2 tsp red pepper flakes to the rub mixture. I warmed up some whole wheat tortillias and with some fresh sliced tomatoes and this was an easy fun dinner. The leftovers all went into a chicken salad for dinner the next night.
Monte Cristo Chicken
When I cooked this at home, BEFORE thawing, I peeled off the foil pan and placed the frozen rectangle into my sprayed baking dish. I like to serve in my real dishes if I am not too busy. We had French bread on the side to dip into the sauce and I sliced up some mushrooms, zucchini and onions for a quick stir fry on the side.
White Chicken Lasagna
We love spinach so I added extra when I assembled our lasagna. I also modified using only 1/2 of the amount of Alfredo sauce and doubled the white wine. (less fat) Dream Dinners only uses lower in fat mozzarella so this is kinda good for you 🙂 I made 2 of these and peeled off the foil pan, when it was still frozen, thawing in my baking dish, baked them and served to at a neighborhood dinner party.
