Lemon Shortbread

Ingredients

  • ¾ cup butter softened
  • 1 ⅓ cups sugar
  • 2 eggs
  • 2 cups flour sifted
  • ½ teaspoon lemon rind
  • 1 21- ounce can LUCKY LEAF® Premium Lemon Pie Filling
  • OPTIONAL ICING:
  • 2 cups confectioners’ sugar
  • 2 Tablespoons water
  • 1 ½ teaspoon lemon juice

Instructions

  1. Preheat oven to 325°F.
  2. Grease a 9" x 13" pan
  3. Cream butter and sugar.
  4. Add eggs singly and beat until light and fluffy.
  5. Add flour and lemon rind.
  6. Put 1/2 dough in prepared pan and cover with pie filling.
  7. Drop remaining dough over top.
  8. Bake at 325°F for 45 minutes or until golden brown.
  9. OPTIONAL ICING:
  10. In a bowl, combine the confectioners’ sugar, water and lemon juice
  11. Stir until combined and smooth (mixture will be thick).
  12. With a fork or small spatula, drizzle on top of cooled shortbread.
